Okay so I'm not going to post a picture because I couldn't get a good one, but I just made some Deeeelicious chili! I may not ever have beef chili again!
All ingredients can be bought at Walmart except the ketchup and Gwen's brown sugar (links at the end):

1 package lean ground chicken
1 can red kidney beans
1 can pinto beans w/jalapenos
3 Roma tomatoes (or 1 regular)
1 green bell pepper
1 can tomato paste
1/4 cup hot salsa (I like Clint's)
1/4 cup sugar free ketchup
1/4 cup Gwens brown sugar (more or less to taste)
1 T heavy cream
Chicken stock, broth, or water
Garlic salt
Weber's Beer Can Chicken seasoning
Whatever other chili seasonings you like
Shredded cheese
Fat free sour cream or 0% Greek yogurt if you prefer
Season and brown your ground chicken until done; set aside. Cut the ends off the tomatoes and cut them in half. Slice the bell pepper. Place the tomatoes and pepper in a blender with the can of tomato paste and 1/2 cup water or stock. Blend thoroughly, but a few little chunks are desirable. Add this puree and the cooked chicken to a large pot or crock pot. Open and drain your beans and add them to the pot. Add the salsa, ketchup, brown sugar, cream, and as much seasoning as you like (you need to taste as you go to get it how you like it). Add more water or stock if desired/necessary. Cook in a crockpot on low for a few hours or simmer on the stove top for 15-20 minutes. Ladle into bowls and let it set for 5 minutes or longer to thicken up (don't worry, it will still be hot when you get ready to eat). Top with some fat free sour cream or yogurt, shredded cheese within E guidelines for fat and, if desired, plan approved crackers (I love it plain). Enjoy!
